The Problem: Fats, Oil, and Grease
Fat, oil, and grease are unavoidable byproducts of commercial kitchens which can cause a lot of trouble. While they start out as liquids, as they move down cooler pipes they end up solidifying. Once in the piping, they form a residue that sticks to the surface, and over time the residue combines with other debris that can end up causing a blockage. This is a problem in residential plumbing, but it is particularly pronounced in commercial kitchens which deal with a high volume of fats, oil, and grease.
The Solution: The Grease Trap
A grease trap is able to stop this collection of residue from building up in your drains. It is a large tank with a pipe in the middle. This pipe allows wastewater to flow through the tank, while food particles sink to the bottom. The grease, fats, and oil rise to the top of the tank owing to its density and the tank is pumped at regular intervals.
A grease trap is required in commercial kitchens because it protects the property from the effects of a clog. Not only that, it protects the general public – backups in the municipal sewage line are more likely when grease and oil from restaurants enter it. This increases the likelihood of a sewage leak which can become a major public health hazard and result in a large fine for the business found responsible for the leak.
